Interesting. The Unicode is fully supported in Windows 7, so it should work there. But anyway, it looks like it's resolved

You can just add a new tab https://imgur.com/Igewuks and have the audio book specific settings there.
You can also right click in "Output Format" https://imgur.com/3ebVbq4, click Arrange and remove all other unused formats under that tab.

Please uncheck the [ ] mkv - https://imgur.com/5RExKVY or you can uncheck the "Use input file chapters" to disable it for all file types.
